Tameya Wrap Fest

Warm baladi or shami bread filled with tameya and arugula, finished with a bright tahini–Zest Fest drizzle.

Ingredients

3-4 pieces already-fried tameya
2 tbsp tahini
3-4 tbsp Brisca Zest Fest
1-2 tbsp cold water (only if needed to loosen)
1/4 cup arugula
2-3 tbsp diced cucumber (optional)
2-3 tbsp diced tomato (optional)
1 baladi or shami bread

Instructions

Make the Tahini–Zest Fest Sauce: Add the tahini to a small bowl. Pour in Brisca Zest Fest gradually and keep mixing — the mixture may thicken and crumble first, but keep stirring and it will loosen. Add a small splash of cold water only if needed for a smooth drizzle consistency.

Warm the Bread: Heat the baladi or shami bread in a pan or sandwich press for 30-60 seconds until soft and warm.

Assemble Wrap: Place the already-fried tameya pieces in the center of the warm bread. Add the arugula on top. Add diced cucumber and tomato if using.

Sauce Moment: Drizzle generously with the creamy tahini–Zest Fest sauce over all the filling — ready to be folded and enjoyed as a bright, fresh Fest wrap.

Notes

If you want extra creaminess, drizzle a little extra Zest Fest directly over the tameya before eating. Lightly mash one tameya piece for a softer texture if you like. Best enjoyed immediately while the bread is warm.
