Olives Freekeh Fest
Warm, nutty freekeh mixed with olives, cherry tomatoes, Parmesan slices, and a big, bright drizzle of Brisca Zest Fest.

Ingredients

olive oil
1 small
onion, finely diced
1 cup
freekeh (washed and drained)
2 cups
water
⅛ tsp
Brisca Herb 'n' Salt
¼ cup
black olives, sliced or minced
¼ cup
green olives, sliced or minced
½ cup
halved cherry tomatoes
¼ cup
Parmesan cheese slices
5-6 tbsp

Instructions

Cook Onion: Heat the olive oil in a pot. Add the diced onion and cook for 2 minutes until softened.

Cook Freekeh: Add the freekeh and stir briefly. Add the water and Brisca Herb 'n' Salt. Bring to a boil, then cover and cook on low for 15-18 minutes until soft and fluffy.

Add Olives & Tomatoes: Transfer the cooked freekeh to a bowl. Add the black olives, green olives, and halved cherry tomatoes. Toss gently.

Sauce Moment: Top with the Parmesan slices and drizzle very generously with Brisca Zest Fest — a bright, fresh Fest bowl.
