Okra Fest
Tender okra simmered with tomatoes, herbs, and green pepper with a vibrant Zest Fest finish.
Yields: 4 servings
Ingredients
2 tbsp
olive oil
1 large
onion, finely chopped
to taste
Brisca Herb 'n' Salt
2 tsp
dried thyme (divided)

green bell pepper, diced into cubes
500 g
okra
2 cups
fresh tomato sauce
½ cup
water
plenty
Brisca Zest Fest

lemon, cut into wedges
Instructions

Cook Base: Heat olive oil in a pan over medium heat. Add chopped onion and cook until softened. Season with Brisca Herb 'n' Salt and add half of the thyme.

Add Vegetables: Stir in diced green bell pepper and okra. Cook for several minutes until slightly softened.

Simmer: Add fresh tomato sauce, remaining thyme, and water. Stir well and simmer until the okra is tender and the sauce thickens.

Sauce Moment: Stir in plenty of Brisca Zest Fest and cook briefly to combine.

Serve: Transfer to a serving dish and serve with lemon wedges on the side.
