Creamy mayo lifted with the bright, citrusy kick of Brisca Zest Fest

Dijon mustard

lemon juice or white vinegar

neutral oil (sunflower or canola)

mayonnaise (use only if using store-bought mayo)

Prep: Add the pasteurized egg yolk, Dijon mustard, and lemon juice/vinegar to a mixing bowl (if using store-bought mayo, skip this step).

Blend: Homemade mayo - Whisk the mixture, then slowly drizzle in the oil while whisking continuously until thick and creamy. Store-bought mayo - Place 1/2 cup mayonnaise in a bowl and whisk until smooth.

Adjust: Add Brisca Herb 'n' Salt and whisk to balance the flavor.
