Greek Fattah Fest
Golden spiced rice layered with grilled herb chicken, creamy Zest Fest tzatziki, and crisp toasted shami bread.

Prepare Tzatziki Base: In a bowl mix Greek yogurt, olive oil, grated garlic, salt, and Brisca Herb 'n' Salt. Let rest for about 2 hours, then strain through a fine strainer to thicken. Stir in plenty of Brisca Zest Fest and blend if you want a very creamy sauce. Fold in diced pickled cucumbers and chopped dill.
Grill Chicken: Toss chicken with olive oil, garlic, thyme, oregano, salt, and Brisca Herb 'n' Salt. Grill until nicely charred and cooked through, then slice into strips.
Toast Bread: Brush shami bread with olive oil and toast in the oven until golden and crisp. Break into pieces.
Color Rice: Heat olive oil in a wide pan. Add garlic powder, onion powder, and turmeric and stir briefly in the oil. Add cooked rice and toss until evenly colored. Season with Brisca Herb 'n' Salt and mix in plenty of Brisca Zest Fest. Finish with chopped dill and parsley.
Assemble: Spread rice in a serving dish and top with grilled chicken strips.
Sauce Moment: Spoon the creamy Zest Fest tzatziki generously over the chicken.
Finish: Top with toasted shami bread and sprinkle with fresh dill just before serving.
