Chicken Risotto Escape

Creamy risotto with tender chicken pieces, Parmesan, thyme, and a bright finish of Brisca Grape Escape.

Ingredients

1 tbsp olive oil
250g chicken breast, cut into small cubes
⅛ tsp Brisca Herb 'n' Salt
1 small onion, finely diced
1 cup risotto rice (Arborio or Carnaroli)
2 cups water (or chicken broth if preferred)
½ tsp dried thyme (or 1 tsp fresh thyme leaves)
¼ cup grated Parmesan cheese
3-4 tbsp Brisca Grape Escape

Instructions

Cook Chicken: Heat the olive oil in a pot. Add the chicken cubes and season with Brisca Herb 'n' Salt. Cook for 4-5 minutes until lightly golden and cooked through. Remove chicken and set aside.

Sauté Onion: In the same pot, add the diced onion and cook for 2-3 minutes until softened.

Add Rice: Add the risotto rice and stir for 30 seconds to coat and lightly toast the grains.

Cook Risotto: Add 1 cup of water (or broth) and thyme. Stir until most of the liquid is absorbed. Add the remaining cup gradually, stirring occasionally until creamy and fully cooked.

Combine & Finish: Return the cooked chicken to the pot and stir in the Parmesan.

Sauce Moment: Serve in bowls and drizzle generously with Brisca Grape Escape for a bright, tangy finish.

Notes

Add extra Brisca Grape Escape on top at the table for an even brighter finish. Halved grapes make a beautiful fresh topping that complements the dish. Add a little extra Parmesan if you prefer a richer risotto.
