Avocado Mozzarella Toast Ruffle

Open-faced toast topped with mozzarella balls, creamy avocado, and tomato slices, finished with a rich drizzle of Brisca Truffle Ruffle.

Ingredients

2 slices toast bread
1 cup mozzarella balls, halved or whole depending on size
1 small avocado, sliced
1 tomato, thinly sliced
3-4 tbsp Brisca Truffle Ruffle

Instructions

Toast Bread: Place the toast slices on a baking tray and bake at 200°C for 3-4 minutes until lightly crisp.

Assemble Toast: Remove the toasted bread from the oven. Add the mozzarella balls on top (halved if large). Arrange the avocado slices over the cheese. Finish with the tomato slices on top.

Sauce Moment: Drizzle generously with Brisca Truffle Ruffle — serve immediately as a fresh, rich Ruffle toast.

Notes

If you prefer the mozzarella slightly melted, place the assembled toast back in the oven for 1-2 minutes only — just enough to warm the cheese without fully melting it. Add basil or arugula after assembling for extra freshness. Works beautifully as breakfast or a light dinner.
