Whole Baked Chicken Freekeh Escape
Whole oven-baked chicken glazed with Brisca Grape Escape, served over soft freekeh infused with extra Grape Escape for a rich, pourable finish.

Cook Freekeh: Heat 2 tablespoons of the olive oil in a pot. Add the onion and garlic and cook 2-3 minutes. Add the freekeh, stir, then pour in the water. Cook covered for 35-40 minutes until tender. Mix 2-3 tablespoons Brisca Grape Escape into the warm freekeh.
Prep Chicken: Rub the chicken with the remaining 2 tablespoons olive oil and Brisca Herb 'n' Salt.
Bake: Bake at 200°C for 1 hour, glazing with 2-3 tablespoons Brisca Grape Escape during the last 15 minutes.
Assemble: Spread the Grape Escape-infused freekeh on a platter and place the glazed chicken on top.
Sauce Moment: Pour the remaining Grape Escape over the chicken so it runs into the freekeh and finish with fresh thyme — ready to be served as a warm, fragrant Escape dish.
