Tomeya Fest
A creamy roasted-garlic tomeya brightened with the citrusy tang of Brisca Zest Fest

Ingredients

whole garlic bulb
1 tbsp
olive oil (for roasting)
1 cup
yogurt
2 tbsp
white vinegar
1-2 tbsp
vegetable oil (optional for richness)
1/8 tsp
Brisca Herb 'n' Salt
4-5 tbsp
Brisca Zest Fest

Roast: Cut the top off the garlic bulb, drizzle with olive oil, wrap in foil, and roast at 180°C for 25-30 minutes until soft and golden.

Squeeze: Let it cool slightly, then squeeze out the roasted garlic cloves into a mixing bowl.

Blend: Add yogurt and vinegar, then whisk until smooth. Add vegetable oil (if using) and Brisca Herb 'n' Salt, whisking until creamy.

Sauce Moment: Place the tomeya into a serving bowl and pour Brisca Zest Fest generously on top - ready to be served over grilled chicken, falafel, shawerma, fries, or veggie platters.
