Pink Pasta Truffle

Fresh tomato pasta finished with melted burrata or mozzarella, basil, and a generous drizzle of Brisca Truffle Ruffle.

Ingredients

200g pasta (penne or spaghetti)
1 tbsp olive oil
1 small onion, finely diced
2 garlic cloves, minced
2 large tomatoes, finely diced
⅛ tsp Brisca Herb 'n' Salt
½ cup halved cherry tomatoes
1 ball burrata, sliced (or 1 cup mozzarella slices)
2-3 tbsp thinly sliced basil
4-5 tbsp Brisca Truffle Ruffle

Cook Pasta: Boil the pasta until al dente. Drain and set aside.

Make Fresh Tomato Sauce: Heat the olive oil in a pan. Add the diced onion and cook for 2 minutes. Add the minced garlic and cook for 30 seconds. Add the diced tomatoes and Brisca Herb 'n' Salt. Cook for 6-7 minutes until the tomatoes break down into a light sauce.

Combine Pasta & Sauce: Add the cooked pasta to the pan and toss to coat fully in the fresh tomato sauce. Add the halved cherry tomatoes and half of the sliced basil.

Add Cheese: Add the sliced burrata (or mozzarella) and mix lightly until it softens and begins to melt into the pasta.

Sauce Moment: Transfer to bowls and drizzle generously with Brisca Truffle Ruffle. Top with the remaining thin basil slices.
