Chicken Spinach Mushroom Fest

Grilled or oven-baked chicken served over onions, mushrooms, and spinach, finished with Brisca Zest Fest, with an option to add minced olives and lemon zest.

Ingredients

2 chicken breasts
1 tbsp olive oil
1/8 tsp Brisca Herb 'n' Salt, divided
1 small onion, diced
2 cups mushrooms, thinly sliced
2 cups spinach
4-5 tbsp Brisca Zest Fest
2 tbsp minced olives (optional)
1 tsp lemon zest (optional)

Cook Chicken: Brush the chicken breasts with olive oil and Brisca Herb 'n' Salt. Grill or bake at 200°C for 15-18 minutes, then slice.

Cook Onions & Mushrooms: Add the diced onions and mushrooms to a pan, cook 3-4 minutes until softened, and season with a touch of Brisca Herb 'n' Salt.

Add Spinach: Add the spinach and cook until wilted. Spread the vegetable mix onto a serving plate.

Sauce Moment: Place the sliced chicken over the vegetables, drizzle generously with Brisca Zest Fest, and finish with optional minced olives and lemon zest — ready to be served as a bright, fragrant Fest dish.
