Chicken Halloumi Escape
Roasted chicken and crispy halloumi served over lettuce and red onions, finished with a bright, sweet-tangy drizzle of Brisca Grape Escape

Coat Halloumi: Place beaten egg in one bowl and panko in another. Dip halloumi strips in egg, then press firmly into panko until fully coated.
Fry Halloumi: Heat 1 tablespoon of the divided olive oil in a nonstick pan over medium heat. Add the panko-coated halloumi and fry 3-4 minutes per side until crisp and golden.
Roast Chicken: Season chicken breasts with half of the divided Brisca Herb 'n' Salt, then brush with the remaining 1 tablespoon olive oil. Roast at 200°C for 18-22 minutes, or until fully cooked and juicy. Slice.
Assemble: Add lettuce and red onions to a serving bowl. Top with the roasted chicken and crispy halloumi. Season with the remaining Herb 'n' Salt.
