Greens Halloumi Escape
Roasted chicken and crispy halloumi served over lettuce and red onions, finished with a bright, sweet-tangy drizzle of Brisca Grape Escape

Ingredients
250-300g
halloumi, sliced into 1 cm-thick strips

egg, beaten
1 cup
panko breadcrumbs
2 tbsp
olive oil (divided)
1/4 tsp
Brisca Herb 'n' Salt (divided)
4 cups
lettuce, chopped
1/2 cup
red onion, thinly sliced
4-5 tbsp

Coat Halloumi: Place beaten egg in one bowl and panko in another. Dip halloumi strips in egg, then press firmly into panko until fully coated.

Fry Halloumi: Heat 1 tablespoon of the divided olive oil in a nonstick pan over medium heat. Add the panko-coated halloumi and fry 3-4 minutes per side until crisp and golden.

Assemble: Add lettuce and red onions to a serving bowl. Top with the crispy halloumi. Season with Herb 'n' Salt.
