Beef Fattah Flow

Grilled beef shawerma served over rice, topped with toasted bread and finished with a creamy yogurt-tahini Cilantro Flow sauce and fresh cilantro.

Ingredients

1 cup rice
2 cups water (for cooking rice)
400-500g beef strips or steak
1 tbsp olive oil
1/8 tsp Brisca Herb 'n' Salt
1 small onion, thinly sliced
1/2 cup fresh parsley, finely chopped
1 cup diced pickled cucumber
3/4 cup tahini
1 cup Greek yogurt
6-7 tbsp Brisca Cilantro Flow
2 tbsp cold water
2 Lebanese bread rounds, cut into small squares
1 tbsp chopped fresh cilantro

Instructions

Cook Rice: Cook the rice with water until fluffy and spread it as the base layer on the serving platter.

Cook Beef: Brush the beef with olive oil and Brisca Herb 'n' Salt. Grill until cooked, then slice into thin shawerma-style strips.

Add Veggies: Mix together the sliced onions, parsley, and diced pickled cucumber. Add the sliced beef and toss lightly, then place the mixture over the rice.

Toast Bread: Spread the bread squares on a tray and bake at 180°C for 6-8 minutes until golden and crisp.

Sauce Moment: Whisk the tahini with Greek yogurt, add Brisca Cilantro Flow, and thin with the cold water. Pour generously over the beef and rice, add the toasted bread, and finish with chopped cilantro — ready to be served as a rich, layered Flow fattah.

Notes

The toasted bread may also be fried instead of baked for an extra crispy finish.
